1. Easy Chicken Katsu with Curry Sauce

You’d think that it’s hard to do but you can easily whip up a curry sauce using Japanese curry paste, coconut milk, diced potatoes and carrots, and drizzle this on katsu.

Ingredients:


  • One (1) 500-g pack of Purefoods Chicken Katsu
  • One (1) 950-mL pack of Golden Fry Palm Oil for deep-frying
  • Seven (7) cups of cooked rice
  • One (1) piece of onion leek, cut into thin strips and curled in ice-cold water

Curry Sauce


  • One (1) 400-mL can of coconut milk
  • One-half pack of Japanese curry paste (about 99 g)
  • One-fourth cup of water
  • One (1) 100-g piece of potato, peeled, and cut into 1 cm cubes
  • One (1) 100-g piece of carrot, peeled, and cut into 1 cm cubes
  • One-half teaspoon of patis (fish sauce)

Procedure:


  1. Deep-fry the katsu in oil until cooked through and golden brown. This takes approximately three to five minutes. Drain the excess oil on paper towels.
  2. In a pan, heat the coconut milk, curry paste, and water. Let it simmer and then add the potato and carrot. Season this with patis. Let it simmer while covered until the sauce thickens while stirring it occasionally.
  3. Arrange the cooked rice in bowls. Pour some sauce on the rice, then top with katsu, and then a bit of sauce on the katsu. Garnish this with curly leeks. Serve the rest of the sauce on the side.

This recipe makes 7 servings.

(Yield: Seven (7) pieces of katsu, and two and one-third cups of curry sauce. One serving is equivalent to one (1) piece of katsu and one-third cup of sauce)

2. Easy Pork Katsu

It’s always delightful to eat delicious pork tonkatsu served with a side of thinly shredded cabbage with sesame dressing, crushed toasted sesame seeds mixed with katsu sauce, and a lemon slice to garnish.

Ingredients:


  • One (1) 500-g pack of Purefoods Pork Katsu
  • One (1) 950-ml pack of Golden Fry Palm Oil for deep-frying
  • One-half (1/2) or a 210-g head of cabbage, shredded thinly
  • One (1) piece of 150-g lemon, cut into wedges
  • One-fourth cup of store-bought roasted sesame dressing

Procedure:


  1. Deep-fry the katsu in oil until cooked through and golden brown or approximately three to five minutes. Drain the excess oil on paper towels.
  2. To serve, place the shredded cabbage on a warm serving plate. Place the katsu pieces on top of the cabbage, serve with the sauce, and garnish with lemon wedges.

Makes 7 servings.

(Yield: Seven (7) pieces of katsu or one-piece per serving)

3. Spicy Chicken Nuggets and Barbecue Fries

This all-American-inspired and serve spicy chicken nuggets with barbecue-seasoned French fries and ketchup or a sour cream-blue cheese sauce.

Ingredients:


  • One (1) 200-g pack of Purefoods Spicy Chicken Nuggets, cooked according to package directions

Dipping Sauce


  • One-fourth (1/4) cup of sour cream
  • One (1) tablespoon of blue cheese, crumbled

Barbecue Fries


  • One (1) 150-g pack of French fries, cooked according to package directions
  • One (1) tablespoon of barbecue powder

Procedure:


  1. In a small, bowl combine the sour cream and blue cheese. Mix well, then cover and refrigerate before using it.
  2. Toss the fries in barbecue powder. Once the fries have been fully-coated with flavor, transfer them to a serving container, and serve with the chicken nuggets and sauce. Serve immediately to maintain the crispiness of the fries.

Makes 3 servings.

(Yield: Nine (9) pieces and one-fourth (1/4) cup of sauce. One serving is equivalent to three (3) pieces and one and one-half tablespoons of sauce.)
